Buat penggemar goreng-gorengan nich..
Di bagian bawah situs ini telah dua tahun lebih tercantum analisa Prof. Dr. dr. Li Peiwen (seorang dokter medis ahli kanker sekaligus pakar pengobatan tradisional Tiongkok) tentang mengapa angka kejadian kanker di Indonesia lebih banyak dibandingkan dengan Cina. Karena orang Indonesia suka sekali makan gorengan, katanya. Dari kerupuk, pisang goreng, singkong goreng, tempe goreng, ayam goreng, kentang goreng, nasi goreng... pokoknya tiada hari tanpa makan makanan goreng.
Hmm... mengapa gurihnya makanan goreng dapat memicu timbulnya kanker?
Eden Tareke dkk dari Universitas Stockholm, Swedia, pada tahun 2002 mengumumkan hasil penelitiannya mengenai akrilamida, karsinogen yang terbentuk pada makanan yang dipanaskan.
Menurut penelitian itu, makanan kaya karbohidrat seperti kentang, singkong, ubi, pisang, nasi, dll jika digoreng akan terurai, kemudian bereaksi dengan asam amino menghasilkan senyawa karsinogenik (pemicu kanker) yang bernama akrilamida. Demikian juga makanan yang dipanggang. Sedang makanan mentah, direbus, atau dikukus tidak mengalami reaksi semacam itu, sehingga tidak menghasilkan akrilamida. Kalaupun ada, kadarnya sangat kecil.
Penelitian terhadap tikus percobaan menunjukkan bahwa akrilamida menimbulkan tumor, merusak DNA, merusak syaraf, mengganggu tingkat kesuburan, dan mengakibatkan keguguran. Seporsi kentang goreng yang dimasak pada suhu 220 oC mengandung akrilamida kurang-lebih 2.500 mikrogram. Pada tikus percobaan, jumlah ini sudah menimbulkan mutasi gen. Apa jadinya kalau tiap hari kita makan kentang goreng, ote-ote, kerupuk, pisang goreng, singkong goreng, tempe goreng, maupun gorengan-gorengan lain?
Waahh.... begitu ya? Pantas dokter-dokter selalu menganjurkan kita untuk menghindari goreng-gorengan. Lantas, apa berarti kita sama sekali tidak boleh makan makanan yang digoreng? Boleh kok, asal tidak terlalu banyak dan tahu kiat sehatnya. Karena bagaimanapun minyak juga dibutuhkan dalam metabolisme tubuh kita, dalam jumlah tidak lebih dari 5-10 ml/hari (1-2 sendok makan). Lalu bagaimana kiat sehatnya?
Menggoreng Sendiri
Salah satu kiat sehat makan makanan goreng adalah dengan cara menggoreng sendiri makanan tersebut. Dengan menggoreng sendiri kita dapat selalu menggunakan minyak baru. Minyak yang belum pernah dipakai untuk menggoreng diharapkan masih terbebas dari akrilamida maupun zat-zat karsinogenik lainnya. Juga, kita dapat mengatur suhu minyak pada waktu menggoreng agar tidak terlalu panas dan mengangkat hasil gorengan saat matangnya sedang, sebelum terlalu coklat apalagi gosong.
Suhu minyak pada saat menggoreng dengan api sedang, rata-rata 180-220 oC. Semakin rendah suhunya, semakin sedikit akrilamida yang terbentuk. Sebaliknya, semakin panas semakin banyak akrilamida-nya. Selain itu, minyak goreng yang dipanaskan terlalu tinggi akan teroksidasi dan terpolimerisasi menghasilkan zat-zat radikal bebas dan minyak trans (trans fatty acid) yang berbahaya bagi kesehatan dan memicu kanker.
Minyak goreng berubah menjadi minyak trans ditandai dengan keluarnya asap dari penggorengan, berubahnya warna menjadi lebih gelap, baunya tengik/menyengat, cairannya lebih kental, serta menyebabkan gatal/iritasi tenggorokan. Namun minyak trans juga ada yang alami tanpa melalui proses penggorengan, yakni pada lemak hewan memamah biak.
Minyak goreng bekas pakai (jelantah), kalau dipakai ulang lebih cepat rusak dibanding minyak baru. Lebih mudah berasap dan lebih cepat menghitam walaupun suhunya belum terlalu panas.
Kebiasaan penjual makanan goreng adalah menggunakan minyak yang sangat banyak, sangat panas (bisa sampai 300 oC), dengan api besar (berulang-ulang sampai hitam), sehingga didapatkan hasil gorengan yang renyah dan kering. Lebih asyik kriuk-kriuk memang, tapi lebih banyak juga senyawa karsinogenik yang menjadi “bonus”-nya.
Makanan yang digoreng akan menyerap minyak di sekitarnya. Makanan tersebut menjadi berminyak, dan senyawa-senyawa karsinogenik di dalam minyak pun turut masuk ke dalam tubuh kita.
Dengan menggoreng sendiri, kita dapat mengatur agar suhunya tidak terlalu panas, yakni menggunakan api kecil, serta menggunakan sedikit minyak agar tidak terlalu banyak akrilamida maupun senyawa karsinogenik lain yang terbentuk dan ikut terserap ke dalam makanan. Dan jangan lupa sebelum makan, sisa-sisa minyak yang menempel pada makanan kita serap dulu menggunakan kertas tisu.
Tetapi kiat menggoreng sendiri dan membatasi jumlah makanan goreng yang dimakan sama sekali belum cukup untuk dapat mencegah kanker. Apalagi kalau sudah terkena kanker, mesti lebih hati-hati lagi. Positive Thinking Your Key to Success

Positive thinking brings inner peace, success, improved relationships, better health, happiness and satisfaction. It also helps the daily affairs of life move more smoothly, and makes life look bright and promising.
Positive thinking is contagious. People around you pick your mental moods and are affected accordingly. Think about happiness, good health and success, and you will cause people to like you and desire to help you, because they enjoy the vibrations that a positive mind emits.
In order to make positive thinking yield results, you need to develop a positive attitude toward life, expect a successful outcome of whatever you do, but also take any necessary actions to ensure your success.
Effective positive thinking that brings results is much more than just repeating a few positive words, or telling yourself that everything is going to be all right. It has to be your predominant mental attitude. It is not enough to think positively for a few moments, and then letting fears and lack of belief enter your mind. Some effort and inner work are necessary.

Before starting with any plan or action, visualize clearly in your mind its successful outcome. If you visualize with concentration and faith, you will be amazed at the results.
Read at least one page of inspiring book every day.
Watch movies that make you feel happy.
Minimize the time you listen to the news and read the papers.
Associate yourself with people who think positively.
Always sit and walk with your back straight. This will strengthen your confidence and inner strength.
Walk, swim or engage in some other physical activity. This helps to develop a more positive attitude.
Think positive and expect only favorable results and situations, even if your current circumstances are not as you wish them to be. In time, your mental attitude will affect your life and circumstances and change them accordingly.
